Pancake Mix

 

 

Ingredients:

10 Cups All Purpose Flour
2-1/2 Cups Powdered Milk
1/2 Cup Sugar
1/2 Cup Baking Powder
1 Tablespoon Salt

Mix all ingredients together in a large sealable container. (I use a big Tupperware Canister.)

To make Pancakes:

2 Cups Mix
1 egg (optional)
1-1/4 Cups Water or Milk
1/4 Cup Cooking Oil

note: If egg is not used, increase water/milk by 1/4 cup.
For thinner pancakes, add a little more liquid

Place dry mix into a medium bowl. Add liquid ingredients and mix well. A few lumps in the mixture is okay, don't mix too long or pancakes may be tough. Preheat a skillet or griddle to 350 degrees. If you aren't using a nonstick skillet, grease it lightly. Pour batter onto hot skillet. When edges look dry and top of pancakes are bubbly, flip them. Cook until bottom is light brown. Serve with syrup or jam.
 

I don't use egg, and I add extra milk to make the pancakes a little thinner. Everyone who has eaten these really likes them! I sometimes make 1-1/2 or 2 times more, and freeze the extras. They are easy to defrost in the microwave, and make a good quick breakfast or snack.
